Happy Friday, friends! Is it really July 31? Did I space out for the entire month of July? I can’t deal. For this installment of my Friday Updates, I want to talk about some random things I’ve been loving lately. Not much has really changed around here that’s worth blogging about, so I’m going to take you through some cool stuff I love. Don’t you worry – a beauty favorites video is headed your way next week!
I’ve been loving…
One Pot Burrito Bowls – We love doing burrito bowls, especially on a Sunday night. We set out a bunch of fixings and we just make them how we like them. I like to make mine salad style. I wanted something similar but that I could do a little quicker, and I found this recipe. It did not disappoint. You throw everything into one pot (after the meat and onions cook through) and it’s done in about 30 minutes. I can also see this dish being done meatless or catered to specific tastes. Seems like it would be easy to modify!
Sugar Snap Pea and Carrot Soba Noodles – This meatless dish did not disappoint at all. It’s hard to find really great meatless dishes that are not black beans and quinoa, or some sort of veggie stir fry. Or zucchini something or other. This is totally different and absolutely delicious! I couldn’t find any soba noodles at my grocery store, so I substituted for vermicelli. Probably not as healthy, but it was delicious! You could also probably do this with zucchini noodles (aka zoodles) and it would be really yummy!
Hugo’s Brunch – I guess while we’re on the topic of food, I really need to mention Hugo’s in Houston. Greg and I decided to do something a little different for our 6 year anniversary. We wanted brunch, and it had to be the best brunch in Houston, nothing less! The reviews/press/everyone were not exaggerating with those claims. It is a traditional Mexican (not Tex-Mex) style brunch with the most amazing, fresh, and unique brunch items (seriously, just click on that link up there and take a gander at what they set out for brunch… it’s not all of those items but it is most). It reminded us of our Puerto Vallarta honeymoon and the amazing meals we enjoyed there. I could have eaten my weight just in the homemade tomatillo salsa and guacamole. They also had incredible traditional Mexican desserts like homemade flan, churros and Mexican hot chocolate (I don’t care that it was 100 degrees outside, that stuff is legit). You basically had to roll us out of there. I want to go back… like now.
This Guy – Greg has been working so hard lately and I am proud of him and what he does for our family. I can’t believe we’ve been married for 6 years. It has felt like forever, but it’s also felt like it’s flown by… that’s a good thing, people. I still laugh at his weird sarcasm and he still refuses to wash pots and pans. Somehow it’s all worked out. I am trying to convince him to do a video with me. I have a running list of words he pronounces I think is weird. I think it’s because he’s a Masshole. (Side note: I love Massachusetts people and the state, I just love any excuse I get to say “masshole.” Haha.) Would you guys want to see a video with us bantering on about how you’re supposed to say things like “serum” and “Oregon”?
Kennedy’s Hair – I have been loving styling Kennedy’s hair lately. She will actually sit still and play with toys or chat with me while I do my thing. No need to bribe her anymore! I did this braid crown following this tutorial and it was surprisingly easy for me to do, and it looked absolutely precious on her. I also have been loving dutch braids on her lately.
Trying New Starbucks Drinks – I posted this picture about a month ago asking for drink suggestions and I have been trying some of them! Right now, I think my favorite is to ask for 4 shots of espresso with 4 pumps syrup (whatever I’m feeling that day… it’s mostly sugar free caramel or mocha that I go for) with a little milk and ice in a venti cup. I’ve been into stronger iced coffee lately and that is super yummy! Thanks Michelle for that suggestion!
