Pumpkin Baked Brie

I’m sure many of you can relate, but “fake it ’til you make it” is something I live by. My house is a mess but I can carefully crop it out for a beautiful photo. I put on mascara to make me feel a little more human.

When it comes to holidays and traditions, this motto is no exception. Greg and I are hosting Thanksgiving this year. Even when we don’t, we always cook. We do a lot of planning and prep work days before so it’s seamless the day of. Being able to rely on fabulous simple and semi-homemade recipes takes off a lot of pressure (thank you, Grandma, for the easiest cornbread stuffing recipe ever).

My mom can tell you. Every year growing up I would ask for Crescent Rolls for any special meal. You think I’m exaggerating, but I’m not. I loved my Crescent Rolls. I associate them with family and special meals, and you can call me cheesy and sounding like an ad right now, but I don’t care. Crescent Rolls are bae.

You know what’s even more bae? Taking my favorite childhood food tradition and reinventing it into something that’s knock-your-socks-off fancy. We’re using them to make baked brie. Back to that “fake it ’til you make it” thing – this looks and tastes like the fanciest appetizer you’ll ever devour, but it’s so, so simple. Just uttering the words “baked brie” gives you about 5 points on the fancy scale.

I have been making baked brie with Crescent Rolls in lieu of puff pastry for years. I can thank Katie for that trick. It’s pretty much the most amazing appetizer and throws together in minutes. This is perfect for any holiday get-together or dinner party!

Since we’re in the midst of pumpkin season, what better way to have baked brie infused with pumpkin butter? My head is spinning, this is so fancy. You can use store bought, or my friend Sarah has an amazing Crockpot Pumpkin Butter Recipe. I picked up my pumpkin butter at my local Walmart, along with the Pillsbury Crescent Rolls. In my opinion, the Crescent Rolls really make this recipe shine.

Baked Brie with Pillsbury Crescent Rolls

  • 1 package Pillsbury Crescent Rolls
  • 1 wheel of brie
  • 1 Egg, beaten
  • Pumpkin Butter
  • Chopped Pecans
  • Ground Cinnamon
  1. Preheat oven to 375F.
  2. Lay the sheet of Crescent Rolls on a baking dish, pinching together the seams.
  3. Spoon 2-3 spoonfuls of pumpkin butter and spread onto the crescent rolls.
  4. Place the brie on top of the pumpkin butter and crescent rolls.
  5. Spoon 2-3 spoonfuls more pumpkin butter and spread evenly on top of the brie. Sprinkle a handful of chopped pecans and a dash of cinnamon.
  6. Fold the sides of the crescent rolls sheet onto the top of the brie and press to seal. Brush the beaten egg over the top. Sprinkle a handful chopped pecans and a handful of brown sugar over the top.
  7. Bake 20-25 minutes, until golden brown.

Dig in, friends. And if you’re feeling even more fancy, top it with more pumpkin butter. I also think this would be amazing with leftover cranberry sauce. Totally trying that next time.
